Okonomiyaki is a Japanese savory pancake made with cabbage and your favorite toppings.
My version is especially light and fluffy, with plenty of cabbage and green onions and just a little flour. The vegetables are the star of this recipe!

- MayonnaiseMayonnaise
- Aonori (getrocknete grüne Meeresalgen), optionalAonori (dried green seaweed), optional
- Etwas Frühlingszwiebelgrün, optionalExtra chopped green onions, optional
ZubereitungInstructions
Finely shred the cabbage and chop the green onions.
Place the cabbage and green onions in a large bowl. Add the eggs, water, instant dashi powder, and a little grated ginger. Mix well.
Gradually add the flour, a little at a time, mixing gently. The flour should lightly coat the vegetables and help hold everything together. There is no need to make a thick batter.
Heat a lightly oiled frying pan thoroughly, then reduce the heat to low.
Add half the mixture and gently shape it into a round pancake.
While the first side is cooking, arrange your chosen toppings, such as bacon, shrimp, or meat, directly on top of the pancake.
Cook gently until the pancake is mostly cooked through and holds together well enough to flip easily. Most of the cooking should happen on this first side.
Carefully flip the pancake so the toppings are underneath. Continue cooking until the second side is golden and all ingredients are fully cooked. Make sure chicken, minced meat, and seafood are thoroughly cooked through.
Transfer to a plate, with the beautifully browned pancake side facing up if you prefer.
Brush a thin layer of okonomiyaki sauce over the surface, drizzle with mayonnaise, and finish with aonori or chopped green onions if desired.
Mit der restlichen Mischung genauso verfahren.Repeat with the remaining mixture.

Eine besonders leichte Okonomiyaki-VarianteA lighter kind of okonomiyaki
This recipe intentionally uses less flour than many traditional okonomiyaki recipes. I like the vegetables to be the main ingredient, with just enough batter to hold them together.
Add the flour gradually at the very end and adjust the amount to your preference. The result should be light and fluffy rather than thick and doughy.

Was tun, wenn du keine Okonomiyaki-Sauce hast? What if you can’t find okonomiyaki sauce?
I didn’t have any okonomiyaki sauce at home, so this time I used Kikkoman Teriyaki Wok Sauce instead. I brushed it over the okonomiyaki, and it tasted great!
